The 5OS Project 2018 Shiraz Touriga
Colour: vibrant deep crimson with a bright red hue
Nose: initially the wine lifts with big floral bouquets that give the impression of clean fresh fruit, there’s a touch of earthiness & dried herbs that sit alongside a bramble of blackberry, fig & dark chocolate.
Palate: simply speaking, fresh, young, juicy & vibrant. Initial juicy red fruit on the front palate, it's obviously a young wine but the soft tannins and gentle mid-palate make this a huge positive, finishes strong with good length, a young wine with incredible drinkability and yet the potential to develop and improve immensely.
Shiraz – destemmed into 2T open stainless steel fermenter, pH corrected and inoculated the following day, plunged for first 3 days and then 2x daily pump overs there after until dry (8 days). Pressed to tank for settling before going into 1 & 2 yr old American oak hogs heads. Touriga – destemmed into a 1T open fermenter, pH corrected and inoculated immediately, very simple ferment, 2x daily pump overs, nothing fancy. Pressed once dry (9 days) The two different varietal components were blended prior to bottling. Oak: Shiraz- 1 & 2 yr old American Hogs heads Touriga – Neutral French Puncheons
