The 5OS Project 2016 Sagrantino
Colour: Deep purple and ruby, black at the core. Nose: Fresh black currant, bramble, cherry and olive tapenade and wild strawberries. Palate: Dialled up on everything - flavour, colour, tannin and acid. The more the merrier. The wine doesn’t skip a beat, though. It’s multi-layered and complex. A palate that mirrors the nose and that goes on and on, building as it does. A superb food wine, which is to be expected from one of Italy’s most underrated grape varieties.
Vineyard: 100% Sagrantino sourced from the Lopresti Vineyard in South Australia. Winemaking: Whole bunches de-stemmed into small fermenters before a short maceration. Once fermenting the wine received 3x short pump overs daily to avoid our extraction of colour and tannins. Post fermentation the wine spent 12 months in a mix of 1st, 2nd and 3rd use French oak. Vegan friendly.
