Colour: Mid crimson on the rim building to black at the core. The colour is deep.
Palate: This is one seriously smooth, satisfying Aussie red. The fruit rolls and rolls, building as it goes. Bitter cherry keeps the package refreshing. The tannins have absorbed into the fruit yet poke through enough to keep the wine serious. Succulent and juicy - an Australian classic Even the critics seem to love it... which is always nice.
Food pairing: Slow roasted lamb shanks.
Vineyard: Hand-picked, 100+ year-old, single vineyard Shiraz from our own LOOM vineyard in McLaren Vale. Winemaking: De-stemmed and pressed straight to fermenter for soaking. Three pump overs daily, before the wine made its way to a mix of new and old French and American puncheons for 12 months.
