LOOM SV 2018 Chardonnay
Colour: Pale gold
Nose: Expressive fresh stone fruit, citrus rind and a hint of reductive struck match before delicate oak influence and an enticing creaminess.
Palate: A medium bodied, linear palate that offers grapefruit, fresh peach and a distinctive mealy richness and creaminess. Beautifully balanced and the perfect middle ground between overtly rich Chardonnay and the leaner styles in the market. The clean and layered palate is long and expressive from first sip to last. Will reward patience.
Vineyard: Single Vineyard fruit from a top site in Piccadilly. Winemaking: Early morning hand picking, straight into the press with a Champagne cycle, we keep the first 200L from the press separate and call this our “bottoms” barrel, and then fill our 1st 2nd barrel (there is no settling or homogenising) pH & TA are adjusted and wine is fermented cool at 15C, at 4 baume we inoculated with CY3079. Fermentation was completed in 11 days. Barrels left on gross lees until racking prior to bottling with the occasional stir to resuspend solids. For this wine we used an old Barrique (225L) for our bottoms barrel, and then large format Sirugue Puncheons for the free run, 1 x new, 1 x 2 yr old. Making the wine roughly 40% new oak. 13% Alc
