ess&see 2016 Sangiovese Rose
Specifically intended to be dry, savoury and a touch confronting. We did a deal with Coriole and grabbed some of their Sang early, soaked it on skins for a couple of days to drag out the tannin we were after, which in hindsight was never going to be an issue, and fermented the free run without much in the way of a light press. To reinforce the fact we wanted the opposite to an easy drink, we’ve held it back a year and released it as a one year old wine. If you like them fresh and fruity best skip this one, I’m not sure we nailed it, but it’s certainly pretty interesting and no one will call you a wuss if you go for it.
