On the nose there’s lemon curd, granny smith apple, roasted cashew, vanilla, hints of struck match. The palate is linear and lean on first impression, but it's the power that really stands out. A mix of granny smith apple, grapefruit, lemon curd, roasted nuts and pie crust before and enticing hint of vanilla.
100% Chardonnay fruit sourced from Bill Hardy's top Chardonnay site in the cool climate region of Adelaide Hills. Fermentation was carried out in barrel with extended lees contact and constant stirring to achieve intensity and complexity. 100% French oak, a mix of barriques and hogsheads (20% new oak) helped impart further complexity and character in the wine.
