The 5OS Project 2017 Blanc de Blancs
Colour: Bright lime green. Nose: Fresh and lively with upfront citrus, lime and white peach. Almond biscotti to bring it all together. Palate: Palate is crisp with a fine bead. Soft and floral with lovely marzipan notes to finish.
Vineyard: Whole bunch fruit selected from a hilly vineyard in the heart of Adelaide Hills. Winemaking: Made using the traditional method/méthode traditionelle. Bunches were hand-picked and whole bunches softly pressed. Juice was settled and fermented cool. After the first ferment, the wine was put into bottle where it completed second fermentation. Aged in bottle and disgorged in September 2019. Vegan friendly.
